Allyn Raifstanger Biography

I grew up in Great Barrington, Massachusetts, in the heart of the Berkshires, and went to  Monument Mountain Regional High School. I loved playing soccer and skied all winter at a local ski area, Butternut Basin. During high school, I worked in restaurants. I pursued that interest with college, where I graduated from the University of Massachusetts with a Bachelor of Science in Hotel, Restaurant, and Travel Administration.

After college, I joined the Omni Hotels and Resorts Corporation, moving around the country to places like Atlanta, New York, Boston, Hampton, New Hampshire, and Cincinnati, where I decided to stay. In 1991, I left the hotel business, opened Allyn’s Café, and have been there ever since.  

2013, I decided to start eating a plant-based diet because of two documentaries I had watched. Several years later, in the summer of 2018, I pursued a dream of writing a book called We Don’t Just Eat Lettuce. The book contains how dietary and lifestyle changes gave me a new perspective on health and life. The book has excellent vegan recipes that even carnivores would love. While writing We Don’t Just Eat Lettuce, I became a student of The Institute of Integrated Nutrition, the largest nutrition and health coaching school in the world.  I graduated as an Integrated Nutrition Health Coach and offer holistic health and wellness programs. My goal with this book and my future as a health coach is to mentor and support people to achieve their health and wellness goals, therefore bringing societal changes.

Integrative Nutrition Health Coach (INHC)

This badge designates that its holder has graduated from Integrative Nutrition’s Health Coach Training Program. They have demonstrated an ability to understand and utilize a wide range of dietary and nutrition theories and develop business and coaching skills to practice in various settings. They have been trained to educate and guide clients to make behavioral changes, resulting in improved nutrition, dietary habits, physical ability, and overall excellent health and wellness.

As a Certified Health Coach, I provide coaching services to help others achieve lasting health through gradual and natural habit formation.
